Baby Bum

I got to TWO new things for this customer!
This cake was for a baby shower, expecting a baby girl. The customer requested a Cinnamon Roll cake for one of the tiers which I hadn't yet done. It turned out pretty amazing tasting!! The second thing she wanted was a baby bum cake decor. The baby bum is entirely edible, made out of marshmallow fondant.

Gluten- Free Lemon Cupcakes

Recently I threw a big beautiful baby for a friend and co-worker of mine recently. The theme was Children's Books with a gray and yellow color scheme. Since the mommy-to-be's MIL has a gluten intolerance, I did my best to accommodate and provide some food and dessert options for her.  
 
I made a regular Strawberry cupcake with Strawberry buttercream frosting and then make a semi-homemade Gluten-Free Lemon Cupcake with Lemon Buttercream.
 
 
Semi-Homemade Lemon Cupcakes
 
1 box (15 oz) Betty Crocker® Gluten Free yellow cake mix
1/2 cup butter, melted
2/3 cup water
3 eggs, beaten
2 tablespoons grated lemon peel
Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups. In large bowl, stir cake mix, water, 1/2 cup melted butter, the eggs and lemon peel just until dry ingredients are moistened. Divide batter evenly among muffin cups. Bake 18 to 23 minutes or until toothpick inserted in center comes out clean. Cool.

Gluten Free Lemon Frosting 
  • ½ cup butter at room temperature
  • ¼ cup cream cheese at room temperature
  • 2 cups sifted powdered sugar (make sure it’s made with corn starch)
  • 2-3 tablespoons half & half
  • a drizzling of more freshly squeezed lemon juice
Directions:
  • Whip butter and cream cheese together using a standing mixer with the paddle attachment: whip together at medium speed for 2 minutes.
  • Slowly add sifted sugar to icing on slow speed, gently increasing to medium speed for 5 minutes.
  • Mix in other ingredients and continue mixing until smooth, fluffy, and creamy.

Gender Neutral Baby Shower

I had the pleasure of making one of my cousin's a cake for her baby shower. Sarah is due with their first child the middle to end of June and decided they wanted to wait to find out the gender of Baby Drey!


For a neutral themed cake, I incorporated both blue and pink along with green, brown, and orange with bows, buttons, and stripes.
The beautiful mama-to-be, the grandma-to-be and the cake lady.

Our Reveal!

We recently had our 20 week doctors appointment and ultrasound, in which we were luckily enough to be able to find out little Dex's gender! We decided to have our families over for dinner to reveal baby's gender to everyone at once and in person! Since I'm a little bit of a baker I wanted to try making a new type of cupcake but that could still be used for that very purpose. So I went with was is called a Hi Hat Cupcake.

but mine were a complete FAIL!

The marshmallow frosting turned out a disaster, I don't think I got it hot enough or maybe the gel tint ruined it, I don't know. But I wanted to show I still make mistakes and things don't always go as planned in the baking world. I usually don't share many of my failed attempts at dinners or baked goods but this one was a complete and utter flop!

I, of course did not fully prepare these cupcakes a head time, I decided to wait to put them together after our appointment with only an hour and a half in between till our families were to arrive.  Poor planning on my part!

Fortunately for me, even though the frosting never got to the consistency I needed it still tasted wonderful so I tinted it and made it the filling inside the cupcake.

It's all about improvising! 
 Plus, I always keep left over frosting in the freezer and was so thankful I do so, I already had extra chocolate cream cheese frosting in there so I quickly defrosted and whipped up to top off my cupcakes. They turned out awesome!


The blue cupcakes are my failed attempt at the frosting not going my way. The chocolate are my improvised version.

We waited until after we ate dinner for the reveal....to help build the anticipation of course ;)
We gave Carter the first cupcake to bite into so he could reveal if his new cousin would be a girl or boy.

The large majority thought for sure it was a girl, but everyone is thrilled to have another little boy in the family.

We are so excited to meet our little man in August!

Gender Reveal Cupcakes


 Our friends Lincoln and Kylah are pregnant with their second child. They had their BIG ultrasound scheduled for Friday. Kylah asked if I could make some gender reveal cupcakes for them half of each color so they could take them to the grandparents to reveal which gender they were having right after their appointment. We decided on a chocolate cupcake with a creamy marshmallow filling topped with chocolate ganache and a white icing "?" (just like a homemade Hostess cupcake).

 I made half with blue tinted filling and half with pink. Making sure you were unable to see any color from the outside. In order to reveal what Kylah and Lincoln were having each grandparent was given the appropriate colored cupcake to break open and see....


They're having a BOY!
Congrats again Lincoln, Kylah and family! We are so happy and excited for you!

Baby Ninja

I love getting requests that really make me think! My friend Hannah asked if I would make cupcakes for her sister's baby shower. The color scheme was hot pink and lime green. The cupcakes were chocolate with mint buttercream and strawberry cupcakes with strawberry frosting. The first request, vegetarian. Her sister is a vegetarian meaning no marshmallow fondant because marshmallow has gelatin in it. Second, the baby ninja. Her sister and her husband call the baby a ninja so she wanted that incorporated in her shower somehow.


I found a recipe for a Vegan fondant that I prepared. It was so easy and less messy to make then the marshmallow fondant. The only downfall was that it stayed really soft. It would be really hard to work with for a full cake but just small cutouts is no problem. As for the ninjas....

I wanted to make little baby ninjas on the cupcakes. I tried drawing them with edible marker but the fondant was too soft. So I ended up piping them on with frosting.

My first vegan recipe!
Vegan Fondant
  • 1 cup light corn syrup
  • 1 cup shortening
  • 1/2 teaspoon salt
  • 1 teaspoon clear vanilla extract
  • 2 pounds confectioners' sugar
DIRECTIONS

1. In a large bowl, stir together the shortening and corn syrup. Mix in the salt and vanilla flavoring, then gradually mix in the confectioners' sugar until it is a stiff dough. If you are using a stand mixer, use the dough hook attachment. Otherwise, knead by hand. If the dough is sticky, knead in more confectioners' sugar until it is smooth. Store in an airtight container at room temperature or in the refrigerator.
2. To use, roll out on a clean surface that has been dusted with confectioners' sugar until it is 1/8 inch thick or thinner if you can. Drape over frosted and chilled cakes and smooth the sides down, or cut into strips to make bows and other decorations.

Diaper Shower Cupcakes

Everyone loves a baby, all precious and sweet. For this blue and green themed diaper shower I knew I wanted to do something to match. I have so many ideas running through this head of mine that it can be a bit intimidating since there is so much I've never tried doing yet (or know how to!). I decided to play around with some marshmallow fondant to see if I could come up with some cute cupcake toppers.

They actually turned out easier than I thought they would, it just took a little creativeness!! I love them!!! Definitely my favorite cupcakes so far :)

Baby Shower Cupcakes

My very first baby shower cupcakes!!  Ordered by my friend Megan who was hosting her sister-in-laws shower. Her colors were yellow, green and pink and she wanted 4 flavors! I made chocolate and vanilla cupcakes with a vanilla buttercream frosting tinted in green. Then a new strawberry cupcake with strawberry buttercream frosting recipes that I will have to share later. Lastly, a triple lemon cupcake with lemon buttercream frosting.




Like the new cupcake boxes? I feel so much more professional now!!
